Summer Crumble

Wonderful flavoured healthy berry fruit crumble, with a hint of orange. Bright red colours, with a crunchy texture. Very easy to make.
70g Quaker Oats
70g wholemeal flour
60g plain white flour
100g butter cut into cubes
Zest of one orange
700g mixed summer berries
90g unrefined brown sugar
1 tbsp lavender honey
1 orange or 2 tbsp orange liqueur
Add to basket
1.Preheat the oven to 180c.
2. Mix together in a large bowl the oats, wholemeal and white flour, sugar and orange zest. Add butter and gently rub into the flour/oats until the mixture resembles breadcrumbs.
3. Place onto a baking tray that is covered in baking parchment and put in the oven for 15 minutes or until golden brown.
4. Place all the berries, orange juice/liqueur, sugar and honey into a pan, stir gently to make sure the sugar and honey coats all the berries, add to heat for 4 minutes, then place into an oven proof dish.
5. Add the golden crumble oven the berries and place in the oven for 5-10 minutes.
6. Serve with mascarpone, clotted cream or greek yoghurt.
