1. Place the Quaker oats in a flat dish or baking tray. Thoroughly coat both sides of the fillets with egg, season well and cover with the oats. Set aside.
2. Melt the butter in a large pan until it foams. Add the fillets and cook over a medium heat for about 3 minutes per side.
3. Use a fish slice, and a fork if necessary, to assist in turning without splashing the hot butter oil.
4. Serve with a green salad and a vinaigrette dressing.
