Chocolate Goo, Strawberry and Nutty Oat Crunch

This recipe combines healthy Quaker Oats, fruit and nuts with a bit of a treat, a sort of chocolate 'goo', which is unbelievably moreish!
3 Egg whites, whipped to firm peaks
2 Egg Yolks
375ml Double Cream, lightly whipped
240g Milk, White or Dark Chocolate, in pieces
200g Quaker Oats, lightly toasted
200g Blanched Hazelnuts, toasted and chopped
400g Fresh British Strawberries, quartered
Few Sprigs of Mint, optional
Crystallised Ginger, optional
Dried Chilli Flakes, optional
Ground Pepper, optional
Add to basket
1. Place the chocolate into a glass bowl over a pan of boiling water. Leave to melt, stirring occasionally until smooth. 
2. Stir in the egg yolks, the mixture will go lumpy but this is fine.
3. Take the bowl off the heat and leave to cool slightly.
4. Once cooler stir in the whipped cream until well combined. 
5. Fold in the whipped egg whites lightly, so that you don't knock any of the air out. That's the chocolate 'goo' finished. You could add crystallised ginger, dried chilli flakes or pepper (odd but goes well with strawberries) to the chocolate 'goo' at this point, if you wanted to jazz the recipe up.
6. Combine the toasted Quaker Oats and hazelnuts.
7. Take a nice glass, champagne flute or glass bowl to present this dessert in, and start layering. Start with a layer of oat and hazelnut mixture, then the chocolate goo, then strawberries and continue until the glass is full. 
8. Finish with a couple of quarters of strawberries, a sprinkling of the oat mixture and a sprig of fresh mint. 
9. Delicious and ready to eat!
