1.Pre-heat oven 180C Grease & line a 900g loaf tin
2.In a food processor roughly chop apricots, remove, then place in a dish with the dried fruit. Reserve 6 tbsp of the juice from the apricots.
3. Process the margarine, sugar, eggs, and baking powder and flour, remove the processor blade, add the fruit mixture and Quaker Oats, mix to combine.
4. Pour into prepared tin. Sprinkle over a few oats to make crunchy topping. Bake for 40 mins
5. Put the reserved juice into a pan, boil to reduce until you have about 2 tbsp. Pour over the cooked cake to glaze. Cool and serve!
