Apricot and Oat Tea Bread

A great tasting cake low in fat and sugar with a good helping of the right kind of fibre found in the oats and fruit.
50g Self Raising flour
50g Quaker Oats, plus extra for sprinkling
1 level tsp baking powder
50g soft butter
14 canned apricot halves
50g caster sugar
50g dried berry mix
1 large egg
Add to basket

1.Pre-heat oven 180C Grease & line a 900g loaf tin
2.In a food processor roughly chop apricots, remove, then place in a dish with the dried fruit. Reserve 6 tbsp of the juice from the apricots.
3. Process the margarine, sugar, eggs, and baking powder and flour, remove the processor blade, add the fruit mixture and Quaker Oats, mix to combine.
4. Pour into prepared tin. Sprinkle over a few oats to make crunchy topping. Bake for 40 mins 
5. Put the reserved juice into a pan, boil to reduce until you have about 2 tbsp. Pour over the cooked cake to glaze. Cool and serve!
