Mix the dry ingredients. Add some raisins if you like!
Melt the syrup and butter together.
Combine the soda with the water and add to the butter and syrup.
Mix together with the dry ingredients.
Press the mixture into a swill roll tin and bake for 20 minutes at 300ºF /150ºC /Gas 3. Gently press down the sides if they seem to be rising too much.
When light brown, remove from the oven and cut into squares.
Return to the oven, which has been switched off (if you have a gas oven, turn it down to the lowest temp), for about 10 minutes to dry out. Allow to cool before removing from the tin.
For an extra tasty treat, melt some cooking chocolate and spread it over the top once they have cooled down.
