Swedish Muesli

Preparation:

Cooking:

Couple of good big cooking apples, preferably Bramleys

Quaker Oats ~ roughly a cupful per apple

Demerara sugar ~ roughly a good tablespoonful per apple

Raisins, chopped apricots or other dried fruit

Juice and zest of a lemon

A tablespoonful or so of melted marmalade

Milk or cream

 A generous grating of nutmeg          
            
            
            
                        
            
                  

Add to basket

Grate the apples into a big bowl : we leave the skin on but peeled if you like, obviously remove the cores.

Grate lemon peel into apple and squeeze lemon juice over it to prevent it going brown ~ stir well

Add Quaker Oats, roughly a cup full for each apple but use your judgement ~ it doesn’t want to be too stodgy

Add 2 or 3 good tablespoons of Demerara sugar and stir well

A dollop of melted marmalade is rather good too and a generous grating of nutmeg

Add dried fruit as available ~ a handful of raisins or blueberries or whatever you have nuts and seeds do not really work

Finally stir in enough milk or cream to give it a nice sloppy constituency

Serve with a sprinkle of brown sugar and a little additional milk
