Spicy Oat and Bean Burgers

Preparation:

Cooking:

1 Medium red onion, finely chopped

2 cloves of garlic, crushed

2tsp of olive oil

1 medium carrot, grated

1 courgette, grated

0.5 tsp mild chilli powder

1 tsp ground cumin

400g tin of kidney beans (or pinto, mixed beans)

1 tbsp Dijon Mustard

1 tbsp soya sauce

1 tbsp tomato puree

75g Quaker oats

To serve: Tomato salsa and fresh coriander

Add to basket
  1.  Fry onion and garlic in little olive oil until softened.
  2. Add grated carrots, courgettes and spices and mix.
  3. Mash the beans in a bowl.
  4. Add the cooked vegetables and spice mixture to the beans.
  5. Add mustard, soya sauce, tomato puree and quaker oats.
  6. Mix all ingredients thoroughly.
  7. With wet hands, form mixture into burgers depending on preferred size.
  8. Fry gently for a few minutes on either side or bake in the oven for 20-30 minutes turning once.
