Oats & Salmon Loaf

Preparation:

Cooking:

1 Cup Quaker Oates

1 Large tin of salmon

1 Cup grated cheddar cheese

½ cup diced onion (red preferable)

½ cup diced celery (peeled to remove string)

½ cup diced carrots (peeled)

1 Tin cream of mushroom soup

Milk to dilute soup

Add to basket
  1. Preheat oven to 350 deg F
  2. Empty tin of salmon with juice into large bowl. Mash skin and bones well and flake salmon. Sprinkle with lemon juice. Add remaining ingredients, except soup and milk. Blend thoroughly.  Line loaf pan (4 ½” x 8 ½” x 3”) with greaseproof paper and spoon mixture into pan.
  3. Bake for 30-40 mins (middle shelf) until edges are browned and centre firm (just like baking cake).
  4. Un-mould onto warmed serving plate and keep hot.
  5. Dilute soup with milk, heat and pour over salmon loaf.
