1. Melt the butter, honey and sugar in a suitable microwaveable dish (not metal!).
2. Remove from microwave and gently fold in the Quaker Oats, dried cranberries and chopped peel.
3. Grease a flan dish with butter and add the mixture, spreading evenly
4. Sprinkle flaked almonds on top
5. Bake up oven for 20 mins at 180ºC
6. Remove from oven and while still warm cut into 8 wedges
Can be served warm with custard or left to cool for a picnic or lunchbox treat
