Turn on oven to 180 degrees.
Melt the butter and syrup in a large pan and add the sugar.
Mix well and stir in the oats, coconut and dates or apricots (chopped Brazil nuts make a nice alternative).
Spoon the mixture into a greased (Swiss roll type tray approximately 9’ x 12’ or 23mm x 30mm) tray and flatten down with the back of a spoon.
Bake at 180 degrees for 15minutes for a softer bar or 20 minutes for a crunchy bar.
Cut the bars to the required size (18 bars usually) as soon as the tray comes out of the oven and leave to go cold.
The cold bars can then be wrapped in cling film and ready to go.
