Stuffed Mushrooms

Herby stuffed mushrooms, good for a starter or light lunch.

  • 4 large mushrooms
  • 1 small finely chopped onion
  • 1/1 finely chopped pepper
  • 1 tbsp olive oil
  • 1tbsp tomatoe puree
  • 2tbsp fresh breadcrumbs
  • 2 tbsp Quaker Oats
  • 2oz mozzarella cheese
  • 2tsp mixed herbs
Add to basket
  1. Remove stalks from mushrooms and finely chop.
  2. Fry onion and peppper in oil for 5 min til soft then add mushroom stalks and cook 2 min.
  3. Mix with tomato pure and breadcrumbs and Quaker oats.
  4. Season and add 2tsp mixed dried herbs, and sprinkle mozzarella on top.
  5. Set oven to Gas 5. Put stuffing on top of each upturned mushroom and put on baking tray.
